The Old Copperplate is Tara Distillery's newest Single Pot Still Whiskey release — a luxurious dram, handcrafted entirely on-site at our distillery near Jervis Bay on the South Coast of New South Wales. From brewing & fermentation, distillation, maturation, and bottling, every step of the journey takes place under one roof, creating a true grain-to-glass Australian whiskey.

While Single Pot Still whiskey is famously associated with Ireland, authentic examples are produced elsewhere in the world but are remarkably rare. Our interpretation honours tradition while expressing the unique character of our Australian home.

Crafted from a traditional mash bill of malted barley,  unmalted barley & Oats, and triple distilled for exceptional purity and elegance, The Old Copperplate has been matured in a carefully balanced combination of American Oak ex-Bourbon casks and New French Oak barrels. The marriage of these casks creates remarkable depth, richness, and complexity.

Rich yet refined, this is a whiskey of exceptional balance—luxurious enough to savour neat, while rewarding those who take the time to explore its evolving character in the glass.

Tasting Notes

Nose: Crème brûlée, Fresh Apples & Pears, Warm Malt biscuits, marmalade, elegant Rose and Black Tea.

Palate: Caramel, stewed apples, honey-pepper, butterscotch, baking spices, creamy porridge & vanilla, .

Finish: Long, warming, with pepper, toasted oak, and lingering caramel sweetness.
