Our Internationally award-winning Tara Pot Still Gin is a modern Australian Gin - the perfect expression of place.  A distinctive, well-balanced, dry gin distilled and bottled in the Shoalhaven area of the NSW South Coast.

 

Our Botanicals

At the heart of Tara Pot Still Gin is a carefully balanced blend of 17 distinctive botanicals that reflect both our coastal Australian roots and a few thoughtful nods to the northern hemisphere. Each ingredient has been chosen for its unique flavour and how it complements our bold Juniper base.

Sea Lettuce - Our key marine botanical is hand-foraged sustainably from Jervis Bay's pristine coastline, sea lettuce brings a subtle briny freshness and a hint of ocean air. It's our way of bottling a coastal breeze.

Native Lemon Myrtle - Bright, zesty, and unmistakably Australian, lemon myrtle adds a citrusy lift with a gentle touch of spice. It brings vibrancy and freshness to every pour.

Australian Mountain Pepper Berry - these dark berries lend gentle warmth and depth, with notes of soft spice and forest fruit.

Native Macadamia Nut - Creamy and smooth, Australian macadamia adds a rich mouthfeel and subtle nuttiness, giving the gin an elegant, rounded texture.

Irish Rowan Berry - A nod to our heritage, these tart, red berries offer a clean crispness and a slightly dry finish that balances beautifully with sweeter botanicals.

Newfoundland Savoury - Earthy and herbaceous, this rare botanical from the east coast adds a savoury complexity and grounding character to the gin.

These botanicals work in harmony with our bold Juniper (pine), SA Coriander (aromatic), Angelica (earthy), Orris (floral), Liquorice root(sweet wood), Orange (sweet citrus), Grapefruit (bright citrus), native Pepper Leaf (peppery), and Nutmeg (fresh).

To bring the recipe together, the botanicals are gently macerated before we distil with natural rainwater - pure, clean, and ideal for distillation. 

Tara Gin is created in a small copper pot still called Beag or Bec (meaning small/little) who was one of the Tuatha Dé Dannann - an immortal race with supernatural powers in Irish mythology.  Beag was known for having a magic well that would grant the gift of wisdom with one drink and foretelling with a second.

Beag helps us coax out the finest flavours from each ingredient, creating a gin that’s bold, bright, and beautifully balanced.

This is a distinctive, well-balanced, and beautifully complex gin. Outstanding in a classic G&T.

Appearance: Clear bright clear spirit

Nose: Juniper, Citrus, with a hint of Floral

Palate: Sweet to start, strong juniper core, fresh citrus and grapefruit, finishing with soft white peppery notes. Perfect in a Gin & Tonic with a slice of lemon.
