As the first new craft distillery established in the Shoalhaven region in more than 140 years, Tara Distillery is leading a new era of Australian whiskey and spirit production - combining traditional Irish distilling methods with uniquely Australian ingredients and innovation.

Founded by Alarna Doherty and Ben Stephenson, Tara Distillery was built from a passion for authentic whiskey making, traditional copper pot distillation, and creating world-class spirits that stand apart from anything else produced in Australia.

Tara Distillery is proud to be one of Australia's pioneering producers of Single Pot Still Whiskey - a historic Irish Whiskey style renowned for its rich texture, complexity, and full-bodied flavour.

Using 100% Australian barley sourced from New South Wales, our whiskey is carefully distilled in traditional copper pot stills to create exceptional depth, character, and balance.

Every stage of production - from grain selection and fermentation to distillation and maturation - is completed with precision and craftsmanship to produce premium Australian Whiskey designed for discerning whiskey drinkers and collectors.

Our internationally award-winning Australian gin is crafted using native Australian botanicals and locally hand-foraged seaweeds sourced from the South Coast of NSW and an Irish-inspired recipe.

This innovative approach creates a coastal-style artisan gin with distinctive bright complexity and a flavour profile unlike any other gin distilled in Australia.

We are also proud to be the first to produce an Australian made Poitín, helping to revive one of Ireland's oldest distilled spirits and introducing it to a new generation of Australian spirit enthusiasts.
