Single Pot Still Whiskey - Inaugural Release

Our Inaugural release is a deliciously rare Australian Whiskey made in the Single Pot Still style.

Locally-grown New South Wales malted barley, unmalted barley, and oats were carefully milled, mashed, and fermented onsite at Tara.

Triple distilled in our Australian made traditional copper pot stills, this inaugural release was then matured in our gentle coastal climate in a selection of Australian Port, Spanish Oloroso Sherry, and New French Oak casks.

This whiskey is the culmination of 5 years of whiskey making since we first fired up our stills in 2020.

Single Pot Still Whiskey is an Irish style of whiskey, unique in it's use of both malted and unmalted barley, and is characterised by a rich, complex flavour profile and a history as deep and textured as the drink itself.

This whiskey is the first Single Pot Still made and released on the mainland of Australia, and the first Australian Pot Still Whiskey to be completely crafted, from milling to bottline, at the one distillery.
